An entrepreneur who starred on Channel 4 cooking show My Kitchen Rules UK has told Insider about his hopes for the new restaurant he is launching after councillors backed his plans to redevelop a property in the Leeds suburb of Rothwell.Simon Jones, a paramedic-turned-chef, received planning approval to transform a building located at a site on Marsh Street into his new venture the Dill & Bay Restaurant.He is expecting to launch his 60 to 80 seater restaurant in mid-November following a fit out The proposals also include reinstating the more traditional shop frontage that is currently hidden beneath steel roller shutters to the front of the premises.Dill & Bay Restaurant will serve dishes similar to those from his successful supper club called Passion and chef Jones will be recruiting a total of six full-time staff, with further part time roles also available.ones said although he comes from a background of being a paramedic, it has taken him two years to get to where he is today.The entrepreneur had initially hoped to open a restaurant and bed and breakfast at a historic property in the heart of Yorkshire’s rhubarb triangle, Carlton Hall Farm. However, this application was ultimately withdrawn due to opposition from neighbours and issues appeasing conservation and highways bodies.
